12 oz (340g) fettuccine or your favourite pasta
2 cups (250g) sliced mushrooms (button, cremini, or wild mushrooms)
1 medium onion, finely chopped
3 cloves garlic, minced
2 tbsp olive oil
1 can (14 oz) coconut milk (full fat)
1/2 cup vegetable broth
2 tbsp soy sauce or tamari
1 tsp paprika
1 tsp dried thyme
Salt and pepper to taste
Fresh parsley for garnish
Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the chopped onions and cook for 2-3 minutes until they become translucent.
Add the minced garlic and sliced mushrooms to the skillet. Sauté for 5-7 minutes until the mushrooms are tender and browned.
